I bought this book just a year after it was published, and it was my constant companion for over 20 years, well-used and much-loved. The recipes are delightful and widely varied in their origins and execution, with many variations. It is extremely well-thought-out, and the index is sensibly organized by both recipe and main ingredient(s). The variety of ways to prepare rice alone -- not a question of flavoring, just preparation methods -- was truly enlightening. However, it was lost in a move a few years back, and while I'd memorized most of my favorites long before that, my husband recently encouraged me to replace it, along with a few other fondly remembered and longed-for books.He is now reading it with almost the same devotion one would give to a great novel! I had forgotten how well Ms. Rodin writes, and her wonderful way of bringing the many cultures of the Middle East to life through food, flavor, legend, and history. My husband and I have both long believed that food is one of the greatest ways to understand and show respect for different cultures and that kitchens and dinner tables are where that mutual understanding begins to flourish. As professional chefs and teachers of many years, we have long taught the concept of cultural tolerance, understanding, and sharing through food. I've been happy to be reminded that this book was one of the first to actually articulate the concept for me.This is an approachable cookbook filled with wonderful, authentic recipes, a well-researched source of many fascinating legends, beliefs, & practices, and a fairly comprehensive overview of the many cultures that make up what we know as "the Middle East."
I owned this book many years ago and loved it. It must have gotten lost at some point due to various moves, so I am glad to have found it again for a good price. If you like middle eastern cooking, this book contains some of the best delicious recipes!
I enjoyed the whole experience of why to eat this way explained in the book. And how long this lifestyle has kept people healthier. I wish I had been told about this meal plan years ago, I might not have had a heart attack and have to eat it now.

Having bistilla in Algeria in 1971 I wanted to make it up on return in home...this was it...I have one hardback and two paperback ...great to read, great to cook from, and great to bring back memories...have served that pie so many times and it never fails to impress
An old favorite! I love many of the recipes, and especially enjoy the stories and history interspersed throughout.
